An intriguing single malt spirit from the Icelandic Eimverk Distillery’s Flóki range.
Few trees grow abundantly in Iceland, but one is the birch, the wood of which has been used in the creation of this single cask spirit (which is also made with Icelandic barley).
Flóki’s single malt whisky was initially matured in refill Flóki Young Malt barrels for three years, prior to a three month finish in birch wood casks. Birch is very porous, and cannot be used to mature whisky for long periods due to high levels of absorption and evaporation.
The whisky itself delivers notes of apples, freshly cut flowers, heather, mossy earthy, honey liquorice, mint, twiggy birch, cinnamon, dried fruit, nutmeg and youthful clean malt.
