A cracking Mexican rum with a lovely old-time feel to it. The producers have clearly gone for a Cuban style when making this rum, hence “Habanero” – meaning from Havana. This rum has been aged in casks that were previously used to mature sweet raisin wine, a perfect fit for the sweetness of the rum, giving it a lovely fruity complexity. Furthermore, this rum has been aged in a solera system, as is often found in sherry and brandy production. In this system, a series of casks are kept, with rum only being bottled from the oldest cask. After bottling around a third of the barrel, the cask is topped up with rum from the next oldest cask and so on. This produces an excellent balance between old and young spirit and a product of superb consistency. El Ron Prohibido is a sweet, dense and complex rum which works well as both a simple sipper and with mixers.
