An intriguing and delectable rum which pays homage to Papa Isio, a Philippine revolutionary leader who struggled for independence against Spanish and American forces in the late 19th and early 20th centuries. One might think that it is Papa Isio who is featured on the beautifully designed label, accompanied by some native Philippine wildlife, yet the brand itself says: “the figure of Don Papa is inspired by Papa Isio, though he is not the same person. Rather, Don Papa is the embodiment of the spirit of Sugarlandia.” This rum is produced with Philippine sugar cane cultivated on the island of Negros at the foot of the might Mount Kanlaon – which was the setting for a large part of Papa Isio’s escapades. This rum has been aged for 7 years in oak casks in the tropical setting of the Philippines, creating a superb complexity and flavour in a short aging period due to the high rate of evaporation. Drinkers should expect dark, sugary notes of toffee and burnt sugar, with a little exotic fruit flavours in the background. This rum is perfect both in served over ice and in cocktails.
