An interesting English single malt whisky produced by the Cotswold’s distillery.
This whisky has been made using 100% local English barley, which is malted at a floor malting at Warminster (a very rare practice these days). It is then long fermented (with two kinds of yeast), and distilled in traditional copper pot stills, producing a characterful spirit.
The new make spirit is then aged in quarter cask barrels that have previously held peated Scotch whisky. The result is a whisky rich in dried fruits, spice, gentle creamy peat, light apple, pear, honey, burnt wood, bananas, pressed flowers, toffee and crunchy malt.
The whisky is bottled at a robust cask strength of 59.3% ABV, and without chill filtration or colouration.
An extremely impressive bottling from this youthful distillery, which was only established in 2014.
