The Cotswolds are an area of rolling hills and farmland found just to the west of south central England. Known for their outstanding natural beauty, they will also soon be known for their outstanding spirits, with the 2014 foundation of the Cotswolds Distillery.
This gin is a statement of intent from the young distillery, which has plans to release single malt whisky in the future. Starting with a base of pure wheat spirit, botanicals of juniper, coriander and angelica root (the big three botanicals of gin production) are added for a macerating period of 24 hours. Then, spirit, alongside a botanical selection of lime, grapefruit, black pepper, cardamom, lavender and (interestingly) bay leaves, are placed in their carter head still. Bottled at a sturdy 46% ABV, and without chill filtration, the distillery uses only the finest Cotswold mineral water for dilution. A really delicious gin, with an old-fashioned spicy character, and a great debut from this new distillery. Expect big things!
