An astonishing rum produced in Europe by the outstanding Zuidam Distillery, which is based in Baarle Nassau in the Netherlands. Zuidam have become renowned for experimenting with what European distilling can produce, creating some incredible rye whiskies, and now rum! This Dutch rum has been made using an extraordinarily long, low temperature fermentation process, of about two weeks, making a low wine of excellent flavour. Particularly, this showcases the intense fruity, sweet nature of the molasses they use. The spirit is distilled in pot stills, which are less efficient than the column stills that many distillers use, however they produce a far more flavoursome rum. This rum was distilled in 2012, before being aged rich, old Pedro Ximénez casks that impart a fruity, dense flavour. This rum is aged for 3 years. On the nose, this rum opens with dense sherried fruit: prunes, dried apricots, citrus rind, sweet raisins and sultanas, before a wave of vanilla, dark oak and baking spice aromas take hold. The palate is faithful to the nose, with delicious, rich sherried fruit, tremendous spice and vanilla oak. The finish is long, sweet, intense and spiced, which lasts and lasts. An outstanding sherry aged rum from Zuidam.
