A fascinating Rye whiskey from South Carolina company Terressentia.

This whiskey is made using modern technology that the company call “TerrePURE”. The process involves taking lightly aged Rye whiskey, and submerging oak staves into the spirit. Ultrasonic vibrations are then applied to the spirit, which is said to have the effect of expediting the aging process and removing “off” flavours.

Certainly, this experimental approach is likely to raise a few eyebrows, particularly amongst the whiskey purists out there. Nevertheless, the spirit speaks for itself: a tasty, oaky and spicy Rye whiskey.

This dram serves up notes of cinnamon, mild chili, oak, sweet grain, toasted rye bread, toffee, dark oak and vanilla.

A glimpse of the future, perhaps, or maybe just an interesting experiment. Either way, this is a whiskey well worth trying.
