A phenomenal gin from Dornach Castle Distillery’s Thompson brothers.
This gin is a product of much feedback and trial and error, following the brothers’ Experimental Batches series. 10% of the base spirit of this gin is distilled at Dornach Castle’s tiny distillery.
An organic gin, which includes the traditional botanicals of juniper berries, angelica root, cardamom seed, aniseed, orange peel, black peppercorn, lemon peel and coriander seed. Yet the Thompsons have a trick or two up their sleeves, and add the more unusual botanicals of meadowsweet, elderflower, and freeze-dried raspberry.
The result is a supple, earthy gin with a good level of spice, a subtle pepper and anise note, and punchy fruity flavours of raspberry and citrus. At 45.7% ABV, the mouthfeel and body of this gin is creamy and full.
Best served with cracked black pepper and high quality tonic.
