A lovely Dominican rum that has undergone a cask finish! These sort of finishes are fairly unusual in the rum world, so drinkers should take this opportunity to taste something a little special. Summum takes its name from the Latin word for zenith, end or ultimate. We’d have to agree this is an ultimate rum, with a very high quality. The rum has been aged for 12 years in a solera system, which sees spirit taken from the eldest cask replaced by the next eldest and so on. This makes for a brilliant balance of old and young spirit, and wonderful depth and complexity. The rum has then been finished in Cognac casks, adding a wonderfully sweet and fruity quality. On the nose this is a dark and rich rum, with aromas fruit cake, grapes, raisins, burnt brown sugar, toffee, sweet wine, molasses and butterscotch. The palate, whilst faithful to the nose, brings extra flavours of black tea, flowers, bright vanilla, burnt oak, succulent grape juice and dusty wood. The finish is long and lingering, with lots of woodspice and wine notes. This rum is bottled a little higher than the standard 12 year old, at 43% ABV as opposed to 38%, giving the flavours a boost.
