A Silkie (more commonly written “Selkie”) is a kind of legendary sea creature that can shapeshift from seal to human and back again.
Here it titles this interesting new Irish whiskey from Donegal distillery Slaibh Liag. Slaibh Liag distillery was constructed in 2019, accompanying the same company’s gin distillery An Dúlamán – which produces an interesting style of seaweed infused gin. As it stands, this is currently a whiskey sourced from other distilleries, but it does represent the Slaibh Liag’s ambitions: which are lofty! Indeed, the distillery wants to produce both single malt and pot still Irish whiskey, triple distilled and peated, and released yearly until hitting the magic 10 year number.
For the moment, we have the Silkie. The spirit itself is youthful and vibrant, with notes of white peach, grapes, honey, malt, pressed flowers, cut grass and herbs, some peppery spice, a little orange peel and drying oak.
A good quality Irish whiskey bottled by a distillery that promises much.
