An homage from the Italian region of Tuscany from the Sabatini family, who have been involved in the production of spirits, vermouth and wines since the beginning of the 20th century.
The Sabatinis enlisted the help of Thames Distillers’ masterful gin distiller Charles Maxwell, a veteran of the industry who aided the family in seeing their vision realised.
The gin is made with nine different botanicals, all of which are grown and harvested in Tuscany. Indeed, the botanicals are largely grown wild on Sabatini properties in Teccognano, Southeastern Tuscany. The botanicals are: juniper, coriander, iris, fennel, lavender, olive leaves, thyme, verbena and salvia.
The botanicals are infused with alcohol and then distilled at Thames Distillers in England, under the watchful eye of Maxwell.
The result is a clean and strikingly herbal gin, with thyme, olive leaves and sage asserting themselves powerfully. These flavours are accompanied by notes of bittersweet juniper, earthy spice and some floral lavender.
A delicious, and almost savoury gin, this would be perfect for a Gibson or a Dirty Gin Martini.
