A rather unusual Bourbon from Rebel Yell.
Straight Bourbon, as stipulated by US law, must be aged in new American oak barrels. Because of this rule, American whiskies are rarely matured in anything else, even though there is no law to prevent the practice, provided the whiskey has reached the two year stipulation in American oak first.
Rebel Yell have taken their Bourbon (made with a mash bill of 75% corn, 20% wheat, and 5% malted barley) and finished it in former wine French oak casks.
The result is a dram that serves up tonnes of spicy French oak flavour. Drinkers can expect notes of rich cherries, raspberries, strawberry, wheaty pastry, toasted nuts, dark chocolate, slight plum, red wine, cinnamon, red apples, nutmeg, vanilla, charred oak, espresso and toffee.
The Bourbon is presented at 45% ABV, giving the mouthfeel and flavours a kick of intensity.
A refreshing break from the Bourbon norm.
