This is the 2nd release of the Raasay distillery’s While We Wait expression – a whisky created to show off their whisky making abilities, while waiting for their own stock to come of age. This whisky is a blend of two distinct whiskies from a single distillery – one peated and one unpeated. This blend is then finished in Cabernet Franc and Cabernet Sauvignon casks. While the first release was finished for just two months in these red wine casks, this second release was finished for 18 months. That’s a tremendous difference, which will have allowed the whisky to soak up a ton more wine influence.
