A long aged Calvados from Querville, a brand produced by the Houley distillery.
Houley distillery is run by the Deschamps family, who maintain orchards of small acidic apples on a little 150 hectare estate. The acidity of the apples makes them a perfect candidate for being transformed into delicious Calvados.
This Calvados has been distilled in both column and pot stills, though the different spirits have been matured separated, and are blended together prior to bottling. The spirit has been aged for a minimum of 18 years in French oak casks, producing a final product of staggering depth and complexity.
Drinkers should expect notes of deep dried fruits, pear cider, caramelised apples and green apple skins, toffee, figs, vanilla, plums, cinnamon, nutmeg, chocolate, slight coffee, tobacco, cedarwood and pressed flowers.
Wonderfully complex and opulent, this is an excellent top of the range Calvados.
