Named after the oldest figure to appear in the Bible, Matusalem are a much loved rum company founded in Cuba in 1872, but who fled to the Dominican Republic following the 1959 Cuban revolution. This has undergone aging in a Solera system, an aging process typically found in Sherry and Brandy production. The system means that as each batch is bottled, the cask is topped up with spirit from the next-oldest cask. This ensures an excellent consistency of flavour, and means that there is some extraordinarily old rum in each batch. This is a nice rounded and oaky rum, with a good amount of estery notes, and a deep caramel sweetness and bright cane note. A classic Spanish Caribbean rum, this is equally at home served neat or in cocktails.
