A delicious Eau de Vie from the Louis Latour Maison, which dates back to 1797.
Bourgogne, or Burgundy, is better known for its world-class Pinot Noir and Chardonnay, but the region is also home to a range of excellent eaux de vie and liqueurs. The foremost of these is Marc de Bourgogne, a kind of pomace brandy that makes use of the leftovers from Burgundy’s renowned wine industry.
This bottling is an excellent example of the style – a Marc de Bourgogne with a great sense of terroir. The spirit is made with Pinot Noir pomace from vines with an average age of 40 years, that have grown in soil rich in clay and limestone. These vines have made their home in the village of Aloxe-Corton, in the Côte de Beaune cru. Louis Latour produce their spirits in the time-honoured tradition, and these grapes have been hand harvested the old fashioned way.
Grape skins are fermented in closed, airless vats for three months, with distillation occurring at the distillery during the winter months. Following distillation, the spirit is aged for 7 years in oak barrels that allow a slight level of oxidation. The barrels themselves are produced from French oak at Louis Latour’s in-house cooperage, and have a medium toast.
The final result is a rich amber spirit that delivers luscious notes of dried fruits, toasted nuts, chocolate, vanilla, coconut, grapes, sandalwood, flowers, old oak and subtle spice.
