Bill Lark, of the famous Lark whisky distillery in Tasmania, is responsible for changing the laws surrounding distillery sizes in Australia, which allowed the nation’s modern craft distilling industry to take off. In this respect, Bill Lark is seen as “The Godfather” of Australian distilling.
Made in the London Dry style, nothing is added following distillation. This gin uses classic botanicals, alongside local Tasmanian pepperberry for a spicy prickle. The pepperberry is macerated in a neutral grain spirit, whilst the other botanicals are added directly to the still.
The gin serves up flavours of bittersweet juniper, cracked black pepper, menthol, earthy rooty spice, and some slight chopped herbs.
