A brand named after one of America’s most prominent founding fathers, the primary author of the Declaration of Independence and the Third president of the United States, Thomas Jefferson. Jefferson’s Bourbon has quickly become something of a cult company known for their small batch production and experimental edge (they’ve even aged Bourbon aboard ships!). This lovely bottling is a testament to that – a small batch, well-crafted Bourbon with a unique flavour profile. They use only a very light char on their new oak barrels, meaning that the Bourbon does not pick up any of the slightly bitter astringent burnt flavours that other Bourbon’s occasionally possess. Aged for between 6 to 10 years, this bottling has an excellent maturity and richness, with a good balance of flavour stemming from their 60% corn, 30% rye and 10% malted barley mashbill. On the nose this is a fresh, herbaceous bourbon, with the slightest hint of smoke and wonderful complex, vanilla aromas. The palate is warming and full, with woodspice, toffee, dense set honey, cherryoak and caramel dominating. The finish leaves classic bourbon notes of caramel, toffee and woodspice, that linger long after the liquid has departed.
