A delicious Sake from Hakushika, one of the oldest sake companies, which has been brewing Sake since the late 1600s. The company is based in Nishinomiya, located in the Nada area, between Osaka and Kobe, a region famous for the quality of its water and its access to high quality rice.
Hakushika translates as “white deer”, the subject of an ancient legend. Chinese Emperor Hsuan-Tsung, the longest reigning emperor of the Tang dynasty, came across a white deer whilst walking his palace gardens. The animal carried a medal which indicated that it was 1000 years old – an auspicious omen for long, prosperous life. The deer presents the company’s long history, and long future to come.
This bottling is a slightly dry style of Sake, which has been made with rice polished to 60% of its original size. The Sake offers up notes of fruity rice, slight dry berries, sweet white peaches, mellow rice and lemon rind.
An excellent pairing for white seafood or chicken dishes.
