The George Dickel Rye is made from a mash bill of 95% rye and 5% barley, so a good deal of spiciness is to be expected. Following its initial maturation, it is finished “the Dickel way” – chilled, and charcoal filtered (or “charcoal mellowed”, as they like to call it). Apparently, the George Dickel Rye is the only rye whiskey on the market to be finished in this way.
