A fascinating and flavoursome liqueur from Farigoule de Forcalquier (what a lot of F’s!)

Thyme flavoured herbal liqueurs are a speciality of the French region of Provence, and this bottling is an excellent example of the style. Made with wild thyme harvested at the start of spring, and sage, lemon, verbena and angelica, this liqueur is verdant, perfumed and fresh.

The spirit itself is rather spicy, with notes of floral thyme, citrus rind, some subtle earthy spice and a little bitter green herbaceous.

Distilleries et Domaines de Provence (the company behind this tipple) suggest drinking this between courses, after a meal or in your coffee. It also does well poured over sorbets, in cocktails or used as a marinade.
