A remarkable rum that pairs the expertise of Caribbean rum makers with Spanish Sherry producers. This is a blend of spirits from Guyana and Barbados, two nations that make very different styles of rum, with the Guyanese being dense, dark and syrupy and the Bajan rum being bright, drier and estery. These spirits have already been aged in the Caribbean in oak casks for 5 years, before being shipped to Spanish Sherry bodega Williams and Humbert to be blended and aged for a further five years. This second maturation occurs in two types of Sherry cask, the first being Palo Cortado for three years, and the second the sweet Pedro Ximénez for two years. It is this two-part maturation process that is referenced by the rum’s “5+5” title. Overall this is a wonderfully complex and well aged rum, with a delightful balance of dry and sweet Sherry influence, and a superb mixture of light and heavy spirits. Drinkers should expect a fruity and rich rum, perfect for slow sipping on a hot night.
