Death’s Door New Make or “White Whisky” (note the lack of “e”) is an “under-age” whisky that responds to the growing trend of moonshines, new makes and white whiskies. This particularly offering from the Wisconsin distillery is made of local produce: with a mashbill of 80% Washington Island Wheat and 20% malted barley from Chilton, Wisconsin. The spirit is double distilled, then rested for a period in stainless steel tanks to integrate, before being lightly finished in un-charred oak barrels sourced from Minnesota. This is a high-terroir bottling, with a surprising flavour profile. On the nose, there are a lot of succulent, tequila style notes, with sweet herbaceous aromas. On the palate, an earthier character takes hold, with slightly malty, vanilla notes and tropical fruit flavours. A delicious one to try neat, this also really shines in cocktails as an alternative base spirit.
