A limited edition release produced by Compass Box in collaboration with famous Parisian wine bar, Juveniles Bistrot à Vins.
According to Compass Box, this was a natural partnership, with the restaurant and the whisky-makers sharing “a similar approach to good food and drink, seeking out integrity and not taking things too seriously”.
Tim Johnston, the Bistro’s founder, gave Compass Box a rough idea of what he wanted, something “bright, smooth, not smoky… an assemblage perhaps between 12 and 15 years old…” Juveniles is the result. This a blended malt containing spirit from four different distilleries.
2% of the bottling is drawn from a first fill sherry butt from Glendullan, another 10% from a refill sherry butt from Compass Box favourite, Clyneslish, 20% from a re-charred hogshead from the same distillery, 34% from a refill hogshead from Balmenach, with the same percentage being drawn another refill hogshead, this time from Strathmill.
The final result is a gentle, waxy and buttery dram, with high-notes of red fruit, apples and pears, chopped herbs, vanilla, sugared malt, citrus zest, slight sherried spices and dried fruits and gentle oak.
Bottled at 46% and both natural in colour and non-chillfiltered, this is a luscious and perfectly balanced whisky.
