An excellent single village rum from the highly regarded Clairin range.

This Haitian rum hails from the village of Cavaillon, three hours drive from the capital of Port au Prince.

The spirit is made at the Arawaks distillery, owned by Fritz Vaval (who gives the bottling its name). This rum begins with the fresh juice of the Madame Meuze sugar cane, grown on the distillery’s 20 hectare estate. The cane is carried by donkey to a mill, before being pressed and fermented for up to five days using natural yeasts. The rum is then distilled in a steam-heated and very small pot still.

The end result is a deeply flavoured white rum, with powerful flavours of fresh summer berries, fudgy chocolate, dried apricot and mango, green banana, white pepper, green apple, lime juice and funky sugar cane.

Extremely authentic, Clairin Vaval will appeal to the purists.
