Another fantastic, single estate, single vintage Haitian rum from the Clairin company.
This rum has been produced in the lofty village of Saint Michel de L’Attalaye, by distiller Michel Sajour.
Sajour farms a rare style of indigenous sugar cane, named Cristalline, which is pressed and then naturally fermented in large wooden vats. The spirit is then distilled in traditional discontinuous stills, which remain direct fired with wood flame.
This particular bottling offers notes of fresh apples, honey, white pepper, funky sugar cane, mango, some chopped mint, icing sugar and a little green wood.
Distilled to proof, this characterful rum weighs in at 56.4% ABV.
