A fascinating single harvest Haitian rum from Le Rocher, a distillery found in the Pignon commune of the island nation.
This rum begins with a cane syrup base, derived from three different kinds of sugar cane.
The spirit has been distilled in a pot still by distiller Bethel Romulus, and bottled at its natural strength of 47.2% ABV.
The final product is a soft, verdant rum with intriguing flavours of ashy cane, green apple, sweet cane, slightly oily nuts, some wood smoke, olives and a somewhat vegetal edge.
A distinctive and different spirit style, this is definitely one for the rum purists out there.
