An interesting “single plot” Rhum Agricole from Guadeloupean producers, Bologne.
La Coulisse is the name of one of the oldest plots in the Bologne estate. The farm is named after an unusual slide system that was used to transport the cut canes from the plot to the mill.
The spirit is produced using black cane, a rare strain of sugar cane which has largely fallen out of fashion due to its low yield. Yet, with low yield comes a concentration of flavours and sugars that makes rum all the more flavoursome and delicious. This rum continues to be made the same way it was 130 years ago, with hand harvesting used.
The cane is cleaned and fermented for a minimum of 48 hours, before being distilled and left to rest in stainless steel months for 18 months. This gives the flavours a chance to fully integrate before bottling, producing a well-balanced, crisp final product.
Bologne La Coulisse delivers notes of lemon rind, passion fruit, cloves, lychee, grassy cane, white sugar syrup, vanilla, coconut, almonds, green apple skin, peppery spice and subtle ginger.
This rum has been bottled at 60% ABV for a bold, satisfying spirit.
