A delightful sparkling Rosé from titan of the Champagne industry, Bollinger. This bottling was first introduced in 2008, and has been popular ever since.
The bottling is made with a blend of 62% Pinot Noir grapes, 24% Chardonnay, and 14% Meunier, to which red wine from the Verzenay and Aÿ vineyards is added, amounting to 5% of final volume. Over 85% of the grapes used are taken from Grands and Premier Crus. 30% of the grapes were vinified in oak barrels, and the wine has been aged on lees for between 30, to 36 months, creating a complex, flavoursome bottling. Dosage is between 7 to 8 grams with each liter.
This non vintage wine offers up notes of cherry, rose petal, strawberries, slight plums, red grapes, some clean flinty notes, a little salt, spice and almond. The wine pours a bronzed pink, with a vivacious effervescence.
A great pairing for salty Asian food, subtle white fish or chicken dishes. Also does well alongside a mixed berry fruit salad.
