A lovely Lowland dram from Ailsa Bay – a recent addition to the Scotch whisky scene, found on the same site as the prolific Girvan grain distillery.
The distillery is capable of producing all manner of spirit, from light to heavy, and peaty to unpeated. Ailsa Bay is one of the most technologically advanced distilleries in Scotland, able to tweak their spirit at a molecular level. This particular bottling is made with 21 phenolic parts per million, to 11 parts per million of “sweetness”.
The final product offers flavours of ashy peat, thick golden syrup and vanilla custard, a little cured meat, flint, cola, lemon rind and charred oak.
Bottled at 48.9% ABV, and without chill filtration, this is a medium bodied and satisfying whisky.
